We buy whole bodies of free range Pork from the fantastic Dingley Dell farm, selecting only gilt pigs with a 14mm probe to ensure good flavour, conformation and fat coverage.

These are butchered in to roasting joints such as Rolled Shoulder , Rolled Hand and Rolled Leg, Belly and Loin.

Pork cuts for quicker cooking such as Chops, Escallopes, Leg Steaks and Tenderloin, these cuts are always available and can be cut to order as you wish.

We also roll whole boneless, rindless Middles of Pork and marinade them with Rosemary, Fennel, Garlic, Chilli and Lemon to create our popular Porchetta.
